A Healthy Breakfast is the Best Start to Your Day [Recipe] | Marla Richards, MS, RD, LD | Improving Health blog by CareATC, Inc.I’m sure you’ve heard that breakfast is the most important meal of the day, and there is reason for this. It’s not a myth! 

Breakfast really does serve as the best meal of the day, because without it your body wouldn’t have the fuel it needs to jump start your metabolism for the day. Your body doesn’t receive fuel while you’re sleeping, so it’s important to provide energy upon awakening in the mornings.

However, only good energy will make for a proper start to your day. A balance of proteins and healthy carbohydrates will give you an adequate dose of fuel to rev up your metabolism. If you’re falling short of ideas or you’re bored with your typical breakfast routine, take some time to add some variety to your mornings. This will give you something new and exciting to look forward to before you start your day!

I always enjoy a breakfast meal that consists of eggs. It’s easy to get burnt out on eggs, but I recommend changing the way they’re cooked for variety. A meal can be completely transformed just by changing the cooking method. For example, if I eat scrambled eggs every morning, this could potentially get old and boring leaving me in more disgust with the thought of eggs each day that passes. However, if I cook the eggs Sunny-Side-Up and place them over half of an English muffin with a little salt and pepper, the meal completely changes – giving breakfast more excitement.

Canadian Bacon and Egg Sandwich

INGREDIENTS

  • 3 slices of Hormel Canadian Bacon rounds
  • 1 egg - cooked or fried to your liking
  • 1 slice of reduced-fat Sargento cheese
  • Cooking spray for skillet
  • 1 cup pineapple chunks (or fruit of choice)

INSTRUCTIONS

  1. Cook Canadian bacon in a skillet (I typically cook on medium for about 5 minutes making sure that each side of the bacon rounds are browned a bit).
  2. Place egg in skillet using cooking spray to ensure the egg does not stick.
  3. When egg and bacon rounds are done cooking, place 1 slice of Canadian bacon on a plate then place 1 cooked egg on top of bacon followed by 1 slice of cheese and the other two rounds of bacon. You can make your sandwich stack-up however you would like. I will usually cook my egg sunny side up and place the egg on the very top of the sandwich so that when I cut my first bite, the yolk pours out on top of the sandwich.
  4. I recommend adding 1 cup of chopped pineapple as a side for a complete balanced breakfast meal. Plus, pineapple and Canadian bacon work well together!

21g protein, 24g carbohydrates (from fruit), and 6.5g fat
