Some may be good choices, but often they are packed with preservatives and unhealthy sweeteners such as high fructose corn syrup.

The base for the bars is dates, which also function as the natural sweetener. To the dates you will add chopped almonds, oats, peanut butter, honey and dark chocolate chips!

Simple. Healthy. Delicious!

INGREDIENTS

  • 1 3/4 cup packed dates, pitted
  • 1 cup roasted unsalted almonds
  • 1 1/2 cups rolled oats (toasted)
  • 1/4 cup honey
  • 1/4 cup creamy salted natural peanut butter
  • 1/4 cup dark chocolate chips

INSTRUCTIONS

  1. Process dates in a food processor until only small bits remain, which usually takes about 1 minute. The dates should form a dough-like consistency.
  2. You do have the option to toast your oats beforehand, which will give them a little more flavor. If you want to do this, simply put the oats on top of parchment paper on a cookie sheet and toast in a 350 degree oven for 10 minutes.
  3. When ready, mix the oats, almonds, and dates in a bowl and set them aside.
  4. Next, warm honey and peanut butter in a small saucepan over low heat. Stir and pour over the oat mixture and combine together.
  5. Let the mixture cool down slightly for 5 minutes, then mix in the dark chocolate chips. They will most likely slightly melt, and that’s okay!
  6. Once thoroughly mixed, transfer to an 8x8 dish lined with parchment paper.
  7. Press down hard on the bars, flattening them on the dish.
  8. Cover with plastic wrap and let the bars harden in the freezer for about 15 minutes.
  9. Remove the bars from the freezer and chop into pieces the size of your choice!
  10. Store in an airtight container in the freezer
