Easy Summer Gazpacho [Recipe]

Take advantage of all the fresh produce in season this summer and whip up a delicious gazpacho. Did you know you can make gazpacho in just minutes with a food processor?

Check out this recipe and make a batch for your family and friends to enjoy this week.

If you are serving a smaller group, half the recipe for a more appropriate portion.

Yields: 10 servings

INGREDIENTS

  • 6 cups chopped tomatoes
  • 1 red onion, chopped
  • 1 cucumber, chopped
  • 1 red bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 tbsp. fresh parsley, chopped
  • 2 tbsp. green onions, chopped
  • 2 cloves minced garlic
  • ¼ cup olive oil
  • 1 tbsp. freshly squeezed lemon juice
  • 5 drops hot sauce
  • 1/4 tsp. black pepper
  • 1/8 tsp. salt
  • 1 (15-ounce) can crushed tomatoes

DIRECTIONS

  1. Place all ingredients in a food processor and process to desired smoothness.
  2. Place in refrigerator and allow to chill several hours or overnight.
