Summer Gazpacho
Yields: 10 servings
INGREDIENTS
- 6 cups chopped tomatoes
- 1 red onion, chopped
- 1 cucumber, chopped
- 1 red bell pepper, chopped
- 2 stalks celery, chopped
- 2 tbsp. fresh parsley, chopped
- 2 tbsp. green onions, chopped
- 2 cloves minced garlic
- ¼ cup olive oil
- 1 tbsp. freshly squeezed lemon juice
- 5 drops hot sauce
- 1/4 tsp. black pepper
- 1/8 tsp. salt
- 1 (15-ounce) can crushed tomatoes
DIRECTIONS
- Place all ingredients in a food processor and process to desired smoothness.
- Place in refrigerator and allow to chill several hours or overnight.
